Delicious and Dairy-Free Avocado & Lime Ice Cream
Rekindle your ice cream love affair with my dairy-free Avocado & Lime Ice Cream recipe.
- 3 limes (use juice, and zest from 1 lime)
- 1 medium avocado
- 2 cups coconut milk (or almond milk. I use unsweetened or sugar-free)
- 1/2 cup sugar (or 1/4 sugar and 1/8 cup stevia granules)
- 1 teaspoon vanilla
In a blender or a bowl using a stick blender combine all of the ingredients and blend on high speed until smooth, thick, and creamy.
Place the mix into your ice cream maker and churn until the ice cream is frozen to your preference.
Serve in chilled bowls. The finished product makes about four 1 cup servings.
